Sharing real food & real stories.

Our national bread – and perhaps Ethiopia’s most iconic dish – is one of the oldest prepared dishes in the world, with a history stretching back to 600 AD. And teff, the grain injera is made from, has an even older history: archaeologists have found evidence of its domestication since 10,000BC. That’s 7,000 years older than Stonehenge!

For me, injera is a symbol of everything I love about my country. It’s designed to be shared, encouraging people to break bread together. And it’s hearty, healthy and nourishing, as it’s gluten-free and packed full of vitamins and flavour.

But it also requires patience – the teff flour is fermented for several days to achieve that unique, tangy flavour. And for me, the crucial ingredient at Lula’s is time, plus care. We serve food fast, but it’s not fast food… something to think about next time you tear into some of our tasty, fresh injera.
